Kornetmu Lazismu: Inovasi Pengelolaan Daging Qurban untuk Membangun Ketahanan Pangan Berkelanjutan

Penelitian ini bertujuan untuk menganalisis inovasi pengelolaan daging qurban melalui program Kornetmu LAZISMU dalam mendukung ketahanan pangan berkelanjutan. Latar belakang penelitian ini didasarkan pada permasalahan pengelolaan daging qurban yang masih bersifat konvensional, musiman, serta berpotensi menimbulkan pemborosan (food waste), sehingga belum optimal dalam mendukung ketahanan pangan. Penelitian ini menggunakan pendekatan kualitatif dengan metode studi kasus. Data dikumpulkan melalui wawancara mendalam, observasi, dan dokumentasi, kemudian dianalisis menggunakan model Miles dan Huberman. Hasil penelitian menunjukkan bahwa program Kornetmu LAZISMU merupakan inovasi strategis yang mampu mentransformasi pengelolaan daging qurban menjadi lebih produktif dan berkelanjutan melalui pengolahan menjadi produk kornet yang memiliki daya simpan lebih panjang. Inovasi ini terbukti meningkatkan nilai tambah produk, mengurangi pemborosan pangan, serta memperluas distribusi manfaat kepada masyarakat. Selain itu, program ini berkontribusi terhadap penguatan empat pilar ketahanan pangan, yaitu ketersediaan, akses, pemanfaatan, dan stabilitas. Dari perspektif ekonomi Islam, Kornetmu mencerminkan implementasi nilai maslahah, keadilan distribusi, dan larangan israf dalam pengelolaan sumber daya. Penelitian ini menyimpulkan bahwa inovasi pengelolaan daging qurban melalui Kornetmu LAZISMU memiliki potensi besar sebagai model penguatan ketahanan pangan berkelanjutan berbasis filantropi Islam. Oleh karena itu, diperlukan penguatan kelembagaan, peningkatan kapasitas produksi, serta sistem distribusi yang lebih terintegrasi agar program ini dapat direplikasi secara lebih luas.
